Kahlua Coffee Vanilla Pops


It's been hotter than normal this weekend so what better way to celebrate Father's Day then to give Dad a grown up treat he can enjoy.

Last night I made daddy some yummy but potent Kahlua Coffee Vanilla pops so he could enjoy today.

It's pretty simple to make and just take a couple of hours to freeze (well my freezer is acting up so I had to leave them overnight), but you can get these done in 3-4 hours.

Read below for a step by step guide on how to make these pops.

INGREDIANTS

  • Kahlua

  • Vodka

  • Coffee (about 1 cup makes 8 pops)

  • Vanilla Ice Cream

  • Small Dixie Cups

  • Craft Sticks

STEP BY STEP GUIDE

Make about 1 cup of coffee for every 8 popsicles you plan to make. Add Kahlua to your liking. Remember you are going to add vodka to the ice cream as well and the more alcohol you add the harder it sometimes is to freeze.

Scoop out a few scoops of ice cream and let soften then add vodka to your liking.

Line up the dixie cups and layer the coffee mixture first - about quarter to half the cup depending on how much coffee vs vanilla taste you want for your popsicle. Then add the vanilla mixture on top.

It's time to put in your craft sticks. You can put some foil on top of each cup and cut a slit to pierce the stick thru. That helps keep the stick in place. Since I was in a rush I didn't do that and just placed the cups very carefully in my freezer and hoped the sticks didn't move while freezing.

Let freeze for 3-4 hours or overnight to be safe.

When you pull them out of the freezer the top layer may still feel a little mushy but the rest of the pop will be frozen.

To safely remove the pop from the cup, cut a little slit at the top of the dixie cup and unwrap.

They should end up looking similar to this depending on how much of each mixture you used.

These are super yummy and fun for a party or just for mom and dad to get thru the day when all the kids are going stir crazy and you need to take the edge off! Just make sure the kiddos don't get their hands on them!
