Over at the Martousa house we are getting ready for Valentine's Day. This morning, I made some Heart Egg Muffins for the family. They are super simple to make and add a little love and excitement to the normal breakfast. It definitely brought a big smile to my kids and hubby's face!
For this recipe you'll need a small heart shaped cookie cutter.
English Muffins or toast
Non Stick Cooking Spray
Butter or Butter Cooking Spray
Separate the yolk from the egg white and whisk your yolk thoroughly.
Season with some salt and pepper if you like
Use a small, single egg skillet to get the perfect round egg. Heat butter over medium high heat until melted or use butter cooking spray.
Coat your heart shaped cookie cutter with nonstick cooking spray.
Put the cookie cutter in center of skillet and pour yolk into the form.
Cook the yolk on low heat for 3-4 minutes.
While cooking the egg, toast your english muffin or toast.
While yolk is cooking pour egg white around the outside of the form. Evenly distribute.
Cook for another minute and until the yolk is a bit firm to the touch.
Tilt the skillet a tad and use a spatula to get egg onto the plate. Sometimes it helps to coat the spatula with some cooking spray so it slides a bit more easily.
Coat some kitchen tongs with some non stick cooking spray and carefully pull out the cookie cutter from the center of the egg.
Put egg on english muffin or toast
